As regards the vegetables used in the local culinary tradition the cultivation of red radicchio and cabbages is ordinary since a long time. The radicchio is picked up and then preserved in oil, or served as a sauce or cream, whilst the cabbages are transformed into ‘Verde’, similar to sauerkraut and well eaten with local sausages and polenta.
