The Valsugana boasts a long tradition in the production of salami. Along with the famous Trentino’s sausage ‘lucanica’ , there is also ‘carne salada’ (salted beef), ‘speck’, ‘cacciatorini’(types of salami), ‘ciuighe’ (types of salami) and ‘mortandela’ from Caldonazzo.
