Ostriches

 

A particular breeding farm that offers an exquisite and alternative final product. The two local farms can be visited by booking. They have an area for the reproduction, incubation, growth and breeding of ostriches. Ostriches eggs can also be found and either be eaten fresh or emptied and painted to create excellent decorations.

Recipe 

FILLET OF OSTRICH IN A CRUST OF RADICCHIO

Ingredients:
500 g. of fillet of ostrich
a head of Bieno’s  radicchio 
150 g. of  lard
Salt 
Pepper 

Procedure
Wrap the ostrich fillet up with slice of lard and then with leaves of radicchio. Flavour with salt and pepper between one layer to another . Cook the fillet in the oven for about 15 minutes at 200 degrees.
The fillet can also be served with balsamic vinegar.
